En aquesta conferència, Jaume Fàbrega mostra les diferents formes en les que la gastronomia apareix als documents escrits històrics, ja siguin literaris, administratius o pròpiament culinaris, fet que ens permet conèixer el moment d'introducció de certs aliments a Catalunya, els plats típics a diferents èpoques o què era considerat un menjar saludable, entre d'altres coses.
